Did you know that a great cup of coffee
can be as interesting as a great glass of wine? The natural
flavours available in great coffees include: caramel, chocolate,
vanilla, and nuts. And we have a roast dating program that
will bring these exotic flavours to your cup!
Like wine, it takes skill and care at
every stage to produce a great cup of coffee. Unlike wine,
coffee goes stale and loses its great flavours within about
6-8 weeks of roasting, and after about 3 months its flavourful
oils go rancid! So, because we want you to experience the
exotic flavours in fresh coffee, our Roast Dating program
ensures that all coffee we ship has been roasted wihin the
past week.
Producing great coffee begins in the hands
of the growers and ends with the brewing and serving.
Our growers select the best stock, grow it according
to time honoured tradition, and harvest and dry
it with
care. Birds and Beans selects only the highest quality
(specialty grade) Arabica beans.
Our roastmaster has the most critical
role
— The flavours in coffee are produced by "caramelization"
during the roasting process. Our roastmaster works with each
new crop to design the roasting profile that exposes the
best
flavours available in the bean. Beans are roasted by hand
and in small batches to ensure the highest quality results.
We classify our roasts according to our
coffee roast colour chart We developed this system in
order to provide a consistent definition of each of our roast
styles.
Once roasted, the most important factor
is to brew the coffee before it becomes stale. Roasted coffee
beans have lost their exotic flavours within 2 months of being
roasted — regardless of the packaging or storage techniques
used. After 3 months coffee goes rancid producing the typical
bitter flavour that we all have learned to associate with
coffee.
In North America most coffee is sold several
months after roasting so we have become accustomed to accepting
stale, rancid coffee as normal! At Birds and Beans we ship
coffee within one week of being roasted. When you try it,
you'll find it like a whole new class of beverage!
Even freshly roasted coffee beans becomes
stale within hours of being ground. That's why its important
to
buy whole beans and grind them just before brewing.
It is
also important to make sure your grinding and brewing equipment
is clean. Over time, rancid oils can collect in brewing
and grinding equipment and will destroy coffee in this last
critical
steps. Also, scale can build up in brewers that reduce
the brewing temperature also spoiling the brew.
