Sustainable Coffee
Our shade grown arabica beans come from
small trees which grow best in the shade of larger trees.
Shade grown coffees thrive under the canopy of leaves of a
naturally fertilized rain forest which, in turn, provides
a haven for many animals including some of the migratory song
birds which visit us in summer — hence our name.
Because the ecosystem of a rain forest
provides the preferred conditions for growing coffee, organic
cultivation methods are a natural fit. Using organic farming
methods ensures the continued health and biodiversity in the
coffee farms and the health of the coffee growers and their
communities. All our coffee is purchased by our coffee suppliers
directly from coffee Co-operatives. In exchange for producing
the highest quality coffee using organic and shade grown methods,
the farmers are guaranteed a buyer and fair price for their
coffee.
All of the raw coffee we purchase is
certified Organic, Shade Grown and is fairly traded. Where
possible,
we purchase coffees that are Fair
Trade, Bird
Friendly™ and/or Rainforest
Alliance Certified.
All of our decaffeinated coffees are decaffeinated
using the 100% chemical free SWISS
WATER® process.

comply with the certification requirements of Transfair
Canada, the Smithsonian
Migratory Bird Institute and the Rainforest
Alliance.
